  • 2 Delmonico steaks, 1-inch thick

  • 4 large eggs

  • 4 tbsp olive oil

  • Salt and pepper to taste

  • Optional garnish: chopped fresh parsley or chives

Step-by-Step Cooking Instructions

  1. Remove the steaks from the refrigerator and let them sit at room temperature for 30 minutes before cooking.

  2. Preheat the oven to 200°F (93°C) to keep the cooked steak warm.

  3. Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil.

  4. Season the steaks with salt and pepper to taste.

  5. Place the steaks in the skillet and cook for 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness.

  6. Once the steaks are done, transfer them to a baking sheet and keep them in the preheated oven to keep warm.

  7. In the same skillet, add the remaining olive oil over medium heat.

  8. Crack 4 eggs into the skillet and cook for 2-3 minutes. As soon as the egg whites begin to solidify, add salt and pepper. Lower the heat and cook as the egg yolk edges solidify. Remove the eggs from the heat as soon as they reach doneness and plate immediately, as the hot pan will continue cooking them.

  9. Remove the steaks from the oven and slice.

  10. To serve, place steak on a plate and top with over easy eggs.

  11. Optional: sprinkle chopped fresh parsley or chives over the dish for garnish.

Steak & Scrambled Eggs with Bacon Bits

Ingredients

  • 2 Delmonico steaks

  • 4 oz Beef Bacon

  • 4 large eggs

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • Optional garnish: chopped fresh parsley or chives

Step-by-Step Cooking Instructions

Lower heat and mix gently as the eggs cook. Remove the eggs from the heat as soon as they are scrambled and move them onto a plate immediately, as the hot pan will continue cooking them.

  9. Remove the steaks from the oven and slice.

  10. To serve, place the scrambled eggs on a plate, top with sliced steak.

  11. Optional: sprinkle chopped fresh parsley or chives over the dish for a pop of color.


Mexican Chorizo & Scrambled Eggs

Ingredients

  • 12 oz Mexican Chorizo (4 sausages)

  • 4 large eggs

  • 2 tbsp of water

  • Salt and pepper to taste

  • Optional garnish: chopped fresh tomatoes

Step-by-Step Cooking Instructions

  1. Remove the chorizo from the refrigerator, slice open, and remove the casings.

  2. Heat a large skillet over medium heat. Add the chorizo to the skillet.

  3. Cook the chorizo for 5-6 minutes then add 2 tablespoons of water. Cover with lid and let cook for 3-5 minutes or until water evaporates.

  4. Take off the lid and continue cooking the chorizo until it turns golden brown.

  5. Once the chorizo is done, pour 4 whisked eggs into the same skillet and cook for 2-3 minutes. As soon as the eggs begin to solidify around the chorizo, add salt and pepper.

  6. Lower heat and mix gently, continuously, as the eggs cook. Remove the chorizo infused eggs from the heat, as the hot pan will continue cooking them.

  7. To serve, place chorizo and scrambled eggs on a plate.

  8. Optional: sprinkle chopped fresh tomatoes for a pop of color.
