This sandwich is juicy, smoky, zesty, and has a little bit of a kick to it. You can top your sandwich with some tangy, dairy-free slaw and pickles for an extra tart crunch factor. More is more when it comes to decadent sandwiches!

The Recipe

First things first, the chicken. Since chicken is the star of our meal, we recommend purchasing honest and sustainable chicken that was raised in a pasture. If you want to feel good about what you’re eating, then buying sustainable meat is the best way.

For this recipe, we recommend a Chicken Breast Fillet or a Dark Meat Fillet from KOL Foods. Both cuts provide tremendous flavor and are responsibly farmed.

Chicken Tip: Pound the chicken so they are an even thickness. With a paper towel, remove any excess moisture from the chicken.

Mix your dry cajun spices, salt, and pepper in a bowl then sprinkle the mixture on the chicken until they are evenly coated.

Heat and season your grilling surface then cook each piece for 4 minutes each side, making sure the chicken gets good color.

While your chicken is cooking, you can prepare the coleslaw. Dump all of your vegetables into a bowl, mix in the dressing ingredients and toss until thoroughly coated.

Most coleslaw is drenched in dressing and it overwhelms the natural flavor of the vegetables while turning your sandwich soggy. By holding back on the dressing, you get more color, flavor, and crunch in every bite!

Save yourself some time by using a mandolin or food processor to achieve uniform shreds of slaw. For added convenience, you can pick up pre-chopped slaw ingredients at your local grocery store.

Coleslaw Tip: Make your coleslaw as colorful as Mardis Gras with bright red cabbage, orange carrots, and green gem lettuce.

Once your slaw is tossed and the chicken is cooked, let it rest while you toast your bread. Brush a bit of olive oil on your bread to achieve the perfect golden brown color.

Take your toasted bread slices, insert your juicy chicken, top it with your crunchy slaw then enjoy!

Step-by-Step Cooking Instructions

Step 1: Season your chicken breast with the cajun spices, salt, and pepper until evenly combined.

Step 2: Season your grill or cooking surface and cook the breasts until juices run clear. Use a thermometer to check your poultry’s doneness. If the temperature reads 165°F, then the chicken is ready. Once chicken is cooked, set aside to rest away from the heat.

Step 3: To prepare your coleslaw, put all of the shredded vegetables into a large bowl with the dressing and toss until combined. Your dressing should include red wine vinegar, minced garlic, a dollop of honey, olive oil, salt, and pepper.

Step 4: Place your cooked chicken on toasted rolls and top with coleslaw. Feel free to add pickle chips or potato chips for more salty flavor.

  • 2 carrots, shredded
  • 1/4 red cabbage, shredded
  • 1 lime (juice and zest)
  • 1 little gem lettuce, shredded

Coleslaw Dressing

  • 3 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 tbsp of honey
  • 4 tbsp of olive oil
  • salt and black pepper to taste
