Za'atar Chicken Thighs
"It is summer and that means grilling season! This za’atar chicken is one of my favorite grilled chicken recipes. Moist, juicy, and full of flavor, I make a batch of this almost every time I fire up the grill. The chicken thighs stay nice and moist and the marinade gives it a nice punch of flavor. It is great cold the next day over a salad and reheats well without drying out.

Ingredients:
- 2 pounds KOL Foods pastured organic, boneless chicken thighs
- 1/3 cup olive oil
- 1/3 cup lemon juice
- 1/4 cup (1.3 oz) za'atar
Combine the olive oil, lemon juice, and za'atar in a gallon size sealable plastic bag. Squeeze the bag to combine the ingredients well. Add the chicken and seal well. Squeeze the bag to distribute the marinade evenly on the chicken. Marinate for one hour, squishing the bag occasionally to make sure it is marinating evenly.
Heat a gas or charcoal grill to medium hot. Remove the chicken from the marinade and place it on the grill. Cook for 3-4 minutes, or until well seared, then turn the chicken and cook until the internal temperature reaches 165.
Remove from the grill and serve immediately.
