Dried Porcini Mushroom Rub
Spice rubs not only add flavor to lamb chops and roasts, they also help create a tasty crust.
Make the rub below. Pierce lamb with a fork on all sides, thoroughly brush lamb with olive oil and then coat in rub. Let sit for 1 hour before cooking.
Rub
- 1/3 cup porcini mushroom powder ( if not available, use food processor or grinder to make from whole porcinis)
- 1/4 cup kosher salt
- 1/4 cup salt
- 1/4 cup sugar
- 1/4 cup balsamic vinegar
- 1 tablespoon black pepper
- 1 tablespoon crushed dried rosemary
- 1-1/2 teaspoons crushed red pepper flakes
Combine all ingredients in a mixing bowl. Prepare and cook lamb as directed above.
