Udon Lamb Ragu

There are many ways to make ragu, and we highly recommend this delicious udon noodle recipe! The 100% grass-fed lamb is the perfect meat to add to this traditional Italian dish.

Ingredients: 

  • 1lb KOL Foods grass-fed ground lamb
  • 2 yellow onions, diced
  • 2 teaspoons roasted garlic powder
  • ½ teaspoon smoked coarse ground pepper
  • 5 lbs heirloom tomatoes, cored, seeded, and cut into 1” dice
  • Kosher salt to taste
  • 36 oz udon or cooked spaghetti noodles
  • 2 tablespoons finely chopped fresh flat‐leaf parsley
  • 2 tablespoons julienned fresh basil

Preheat wok on high.

Add lamb; cook, stirring occasionally, until browned, about 5 minutes.

Reduce heat to medium high. Add onions; cook, stirring occasionally, until softened, about 6 minutes.

Add garlic powder and pepper; cook, stirring occasionally, 1 minute.

Add tomatoes; season with salt. Increase heat to high; bring to simmer. Cover; cook until tomatoes begin to break down, about 8 minutes.

Uncover; cook, stirring occasionally, until sauce thickens, 10‐12 minutes.

Add noodles; cook, stirring occasionally to untangle them. Until warmed through, 2‐3 minutes.

Transfer to warm pasta bowls; garnish with parsley and basil.

Serves 6‐8
