Sous Vide Top Sirloin, 3 Ways


  • 1 100% grass-fed kosher Top Sirloin Steak or Roast from KOL Foods

Use the ingredients from the following recipes:

Step 1

Set the Sous Vide machine to 131ºF (55ºC).

Step 2

Season steaks. Place each steak in its own medium zipper lock bag with 1 teaspoon olive oil or beef schmaltz. Seal the bags using the water immersion technique and place in the water bath. Set the timer for 2 hours.

Step 3

When the timer goes off, remove the bags from the water bath. Remove the steaks from the bags and pat dry.

Step 4

Heat 2 tablespoons frying oil such as grapeseed oil in a large skillet over high heat. When the oil is almost smoking, add the steaks and sear until well-browned, about 1 minute per side.

Step 5

Let steaks rest for 5 minutes before cutting or serving.
