Cinnamon Jalapeno Chicken
A surprising summer combination: chicken with cinnamon and crushed jalapeños! The two flavors mesh together beautifully, and with the brown sugar, everything balances out perfectly. Sweet and spicy!
A great dish for on the grill, and just as easy in a skillet.
Ingredients:
- 4 chicken fillets or other chicken cuts
- 1 pinch of cinnamon
- 1 pinch of cane brown sugar
- 1 pinch of salt and pepper
- 1 sprig of fresh rosemary, ground
- 2 crushed jalapeños (roasted if you like to take the sharpest edge off)
- 1 pinch of paprika
- 2 tablespoons olive oil
- 2-3 tablespoons white wine, chicken broth or water (optional)
- Combine cinnamon and sugar in a bowl or food safe bag, then add the other ingredients except the chicken. If it's too dry to your taste, add a little wine, broth or water to taste.
- Add chicken to the sauce, and coat the chicken with the sauce. If using bag, squeeze out as much air as possible. Let marinate in refrigerator for 1 to 8 hours.
- Cook the chicken on your grill or skillet until done, basting with your favorite white wine if you like.
