Chicken or Turkey Cracklings

These cracklings make an excellent snack when you're on the go! If you love crunchy treats but don't want to indulge in regular chips, this is the recipe for you! 

  • Skin from about 2 KOL Foods organic, pastured Turkey breast or 1-2 lb pack of KOL Foods organic, pastured Chicken skin

Preheat the oven to 375° and line a baking sheet with parchment paper.

Spread the poultry skin flat on the parchment and cover with another sheet of parchment and another baking sheet. set a heavy ovenproof pot on top.

Bake for about 30 minutes, until the skin is crisp and golden. Drain liquid fat from sheet into a glass jar, store in refrigerator and use as schmaltz.

Let skin cool slightly, then break into pieces.
