Paleo Breakfast Casserole

Are you looking for hearty breakfast that is not only healthy, but will keep you full and content for hours afterwards? If so, then this delicious breakfast casserole with KOL Foods 100% grass-fed, organic ground beef is something that you should try! Added bonus - it's also Paleo! 


  • 6 eggs, whisked
  • 1lb KOL Foods Grass-Fed Ground Beef
  • 2/3 cup almond meal
  • 1 sweet potato, shredded
  • 1 medium yellow onion, diced
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Pre-heat the oven to 375 degrees.

Warm some olive oil in a skillet and sautee the diced onion for 6-8 minutes, until translucent.

Crumble the ground beef into the skillet and brown for 5-10 minutes.

While the meat is cooking shred the sweet potato.

Beat the eggs in a large bowl.

Add the shredded sweet potato and almond meal. Then add the cooked meat and onion and mix.

Grease one rectangular glass dish with olive oil or coconut oil (or you can use two smaller dishes) and pour the mixture in.

Cook for 25-30 minutes.

Let sit for 10+ minutes before eating
