Turkey Butternut Squash Chili
This turkey chili is simple to throw together but oh-so-flavorful. The butternut squash adds a subtle sweetness to some bites and helps this chili deliver healthy (but still comforting) goodness!
Ingredients:
KOL Foods Ground Turkey Mixed – 1 lb
KOL Chicken Bone Broth – 2 cups
Yellow onion – 1, diced
Garlic cloves – 6, minced
Butternut squash – half a large squash or 2 cups, diced
Diced tomatoes – 1 can, 15 oz
Black beans – 1 can, 15 oz, rinsed and drained
Dried bay leaves – 2
Chili powder – 2 tbsp
Cumin – 1 tbsp
Smoked paprika – ½ tbsp
Chipotle powder – 1 tsp
Dried oregano – 1 tbsp
Salt – 2 tsp
Olive oil - 1 tbsp
Directions:
1. Heat tablespoon of olive oil in a large pot. Add ground turkey to the hot oil and begin to brown. Break the ground turkey up as it cooks.
2. Once meat has browned, add the diced onion and garlic. Cook for a few minutes until the onion is tender and fragrant.
3. Add all spices to the pot and stir until combined.
4. Add the chicken broth, canned tomatoes, black beans, and diced butternut squash. Stir and then bring the pot to a boil.
5. After the chili reaches a boil, reduce the heat to a simmer. Leave the chili to simmer for 20 minutes or until the butternut squash is tender.
6. Remove both bay leaves. Serve with your favorite chili toppings and enjoy!
